Recently I’ve had a few people ask me to post a recipe that was a bit easier to complete and one that didn’t call for anything exotic or overly expensive to buy. This recipe will certainly fill that void. I first got the idea a few months ago while perusing a few of my food groups on Facebook and jotted down the recipe in hopes to make it that night… Well that didn’t happen, but now, a bit later, I can show you guys how it went.
The protein that I used was chuck beef, one of the cheaper, often underrated cuts of beef. It is usually reserved for things like pot roast or other “slow and low” cooking methods due to its relatively high fat content and Its ability to fall apart when cooked as such. For this recipe however, I am going to be cooking with high heat and for a relatively brief time, so the preparation of the beef beforehand is quite important to achieve optimal results. The first step is to cut along the natural lines in the beef and trim off any extra fat that separates the individual muscles. From there you want to slice the beef into bite-sized pieces, ensuring that you cut against the grain of each piece (this makes it much more tender). Spicy Beef
Ingredients
- 2 lb chuck beef (trimmed and sliced)
- 2 jalapenos, sliced
- 3 green onions, sliced on the bias
- 1/3 cup mirin (or rice wine/white wine)
- ¼ cup sesame oil
- 1 tbsp. minced garlic (from the jar is fine)
- ¼ cup olive oil
- ½ tsp. red pepper flakes
- 1 tsp. black pepper
- ½ tsp. salt
Instructions
- Slice beef according to directions above and place in a medium bowl
- To the same bowl, add garlic, sesame oil, mirin, pepper flakes and salt & pepper, allow to marinate for about 20 minutes (or overnight in the fridge if you please).
- Heat olive oil in a large skillet over med-high heat and add your marinated beef along with any leftover marinade in the bowl
- Pan-fry until the beef starts to brown, then toss in your jalapenos and green onions. Continue to cook until the jalapenos and onions start to soften, then serve over rice. Enjoy!
