A wonderful solution to the boring work-week meal, this colorful and healthy meal will be the envy of all your coworkers
Preheat oven to 425F. Toss the chicken with the weber spice mix and a quick drizzle of olive oil, set in the fridge while you prep the other ingredients.
Toss the broccoli with some olive oil,salt and pepper, then spread out on a baking sheet. Do the same with the potatoes adding some cayenne pepper (if using). Spread the chicken out on a separate pan.
Bake all ingredients for 12-15 minutes. Remove the chicken and broccoli, then stir the potatoes and bake them for another 15 minutes or so until they look done.
Divide into serving containers and top with a dollop of hummus, or sliced avocado. Done! now you have meals for the whole week!
